Adam Henson welcomes some new arrivals to his farm, and Tom Heap tries to figure out the true extent of the financial threat now facing the UK’s farms.

Margherita takes a walk along the shore at Criccieth where she meets Twm Elias - a local naturalist who has devoted more than 30 years to coming up with Welsh language names for flora and fauna. 

She also meets Fionn Gwyn, a local painter who illustrates seasonal flora and fauna accompanied by their Welsh names.

Tom’s trying to figure out the true scale of the financial threat facing our farmers once the UK moves away from the current EU subsidy system. Whatever happens with Brexit, by 2021 the way our farms are funded is likely to change and it’s our small to medium size farms that might be hardest hit. Tom visits beef farmer Nigel Gribble, who’s facing the hard reality of that change at his small family farm near Launceston in Cornwall. Today he’s having a visit from farm finance whizz Adrian Matthews who’s going to tell Nigel what he’s doing right – and what he’s doing wrong! There are a few surprises in store for Nigel but he takes Adrian’s advice on board and is determined to do whatever he can to survive the subsidy storm ahead.

Steve heads out on what was once described by Admiral Nelson as “one of the most treacherous stretches of sea in the world” – the Menai Strait. 

This narrow body of tidal water separates Anglesey from mainland Wales.

As well as piloting an innovative new boat, Steve meets a group giving people with physical disabilities and learning difficulties the chance to become budding sailors.

Margherita returns to Welsh mushroom magician Cynan Jones, who was first visited by Countryfile in 2010 when he began growing shitake mushrooms in a shipping container.

She sees how they’ve expanded into creating umami flavoured powers and rubs. 

Outdoor chef Chris Roberts tries out the mushroom rubs on a hunk of Welsh black beef cooked over flame on the slopes of Snowdonia.
